Depuis lundi, il est d\u00e9sormais possible de devenir \u00e9cailler au Centre de formation professionnelle du Lyc\u00e9e de la mer et du littoral de Bourcefranc-le-Chapus. Objectif : former des professionnels capables de valoriser les hu\u00eetres, les coquillages et les fruits de mer en g\u00e9n\u00e9ral, dans un territoire o\u00f9 la conchyliculture occupe une place centrale. Les premiers stagiaires ont commenc\u00e9 leur formation cette semaine.<br \/>\nFormer des sp\u00e9cialistes de l\u2019ouverture des hu\u00eetres et de la mise en valeur des coquillages : c\u2019est l\u2019objectif d\u2019une formation in\u00e9dite lanc\u00e9e au CFPPA du Lyc\u00e9e de la mer et du littoral de Bourcefranc-le-Chapus. Cette semaine, pendant cinq jours, 16 stagiaires vont se former au m\u00e9tier d\u2019\u00e9cailler, un savoir-faire tr\u00e8s recherch\u00e9 dans la fili\u00e8re conchylicole o\u00f9 les besoins sont croissants. Au programme : la connaissance des coquillages, les techniques d\u2019ouverture, mais aussi les r\u00e8gles d\u2019hygi\u00e8ne et de s\u00e9curit\u00e9 alimentaire. Les stagiaires doivent apprendre \u00e9galement \u00e0 pr\u00e9parer des plateaux de fruits de mer, d\u00e9couper des crustac\u00e9s ou encore conseiller les clients. Cette formation est organis\u00e9e en partenariat avec le Comit\u00e9 R\u00e9gional de la Conchyliculture de la Charente-Maritime, qui souhaite r\u00e9pondre \u00e0 une demande croissante de personnel qualifi\u00e9 dans les bars \u00e0 hu\u00eetres, les march\u00e9s, les cabanes de d\u00e9gustation ou encore les \u00e9v\u00e9nements gastronomiques. Install\u00e9 au c\u0153ur d\u2019un bassin ostr\u00e9icole reconnu, le centre de formation s\u2019appuie sur son ancrage territorial et son expertise dans les m\u00e9tiers de la mer pour proposer ce nouveau parcours professionnel.
