La Japanese Cuisine Academy ouvre ses portes lundi prochain \u00e0 Aytr\u00e9, pr\u00e8s de La Rochelle. Un centre de formation d\u00e9di\u00e9 \u00e0 l\u2019art culinaire japonais. Pendant une semaine, la premi\u00e8re promotion compos\u00e9e de d\u00e9butants et de professionnels de la restauration vont se retrouver dans le cadre d\u2019une formation pour devenir Sushiman ou comment ma\u00eetriser la confection des sushis.<br \/>\nEn France, l\u2019offre de restauration japonaise ne cesse de se d\u00e9velopper et touche un public toujours plus large. Pour r\u00e9pondre \u00e0 la demande des professionnels en qu\u00eate de formation et leur permettre de ma\u00eetriser la technique des gestes ancestraux, la Japanese Cuisine Academy est n\u00e9e au sein des locaux de Sushi Robots, en Charente-Maritime. Cr\u00e9\u00e9e en 2015, cette soci\u00e9t\u00e9, leader europ\u00e9en dans la fabrication de machines pour la gastronomie japonaise, a d\u00e9cid\u00e9 d\u2019ouvrir les portes de son premier centre de formation \u00e0 Aytr\u00e9, pr\u00e8s de La Rochelle. Une \u00e9cole d\u2019un nouveau genre qui a pour objectif de former \u00e0 l\u2019art de la cuisine japonaise. Elle accueillera ses premiers \u00e9l\u00e8ves du 22 au 26 janvier, dans le cadre d\u2019une formation pour devenir Sushiman, dispens\u00e9e par le chef Micha\u00ebl Pankar, vice-champion du monde de sushi en 2023.<br \/>\nPour incarner ce nouveau projet, une cuisine p\u00e9dagogique de 40m2, enti\u00e8rement \u00e9quip\u00e9e, a \u00e9t\u00e9 con\u00e7ue afin d\u2019accueillir jusqu\u2019\u00e0 8 apprenants. \u00c0 destination des d\u00e9butants, des personnes en reconversion et des professionnels qui souhaitent diversifier leur carte ou se perfectionner, les formations d\u00e9livr\u00e9es priorisent une approche pratique, ax\u00e9e sur la r\u00e9p\u00e9tition culinaire propre \u00e0 l&rsquo;art des sushis. Elles permettent d\u2019\u00eatre rapidement op\u00e9rationnel et refl\u00e8tent les r\u00e9alit\u00e9s du m\u00e9tier, tout en pr\u00e9servant l&rsquo;int\u00e9grit\u00e9 des traditions et de la culture culinaire japonaise.<br \/>\nD\u00e8s le mois de mars, la Japanese Cuisine Academy proposera une formation sur la confection de Gyozas, des raviolis japonais.
